Easy Slow Cooker Beef Goulash

Quick nutritious food cannot come any easier with this easy slow cooker dinner.

What you need

  • 450g Stewing Beef 
  • 1 tin Chopped Tomatoes 
  • 2 medium Onions 
  • 500ml Beef Stock – beef stock cubes would work. 
  • 2 tbsp Paprika 
  • 1 tsp Smoked Paprika (optional)
  • 1 tsp Chilli Powder (optional) 
  • 3 cloves of Garlic, chopped finely
  • 2 peppers – one Red and one yellow works well
  • 1 stick celery – finely chopped
  • 2 Bay leaves

How you make it:

  1. Peel and cut the onions into nice sized cubes. Add them to the slow cooker.
  2. Wash and de-seed the peppers. Cut them into slices and add them to the slow cooker.
  3. Add the chopped garlic, beef, paprika, tin of chopped tomatoes and chilli (if using) to the slow cooker also.
  4. Then add the stock to the slow cooker.
  5. Plug the slow cooker in and turn it to low.
  6. Leave it for a minimum of 6 hours however leave it longer if the meat chunks are big.  Also the longer you leave it the more tender the meat will become.  If you want it to cook faster then put the cooker at the high setting and cook for 4 hours.
  7. To check if it is ready to go, simply remove a piece of meat and taste a little, it should melt in your mouth. If it is chewy and dry it isn’t ready. Thinken the sauce with a roux or with some gravy granules.
  8. I like to serve it with mashed potato, you could also serve it with some brown rice.
  9. To me this is a medium spicy dish, leave the chilli out or use less if you don’t like it too spicy.

This dish cooks well in a casserole dish, with the lid on, in a preheat oven (180c) for about 2 1/2  hours.
